Pineapple Kesari Sheera recipe

Its been a more than a month i have been on break for blogging and not at all in a mood, no time and fultu lazy to get back again on track... even today i wasn't sure whether i could make it but then foodiemonday friends posting all beautiful yellow and spring related recipes for our basanth panchami theme and i just went in to the kitchen and search for ingredients and then i could find a simple recipe to share which i love the most and make this very frequently whenever my sweet tooth tingles ..... 

Level: easy
Cook time: 20 mins
Serves:4

1 cup:250 ml
1 tablespoon: 15ml
1 teaspoon:5ml

Ingredients

Pineapple syrup:
Pineapple chopped: 1 cup ( i used canned)
Sugar: 2 tablespoons

Kesari/Sheera:
Semolina/Rava: 1 cup ( i took very fine variety)
Sugar: 1/2 cup ( add more according to taste)
Ghee/Butter: 1 tablespoon
Milk: 1 cup
Water: 1 cup
Cardamom Powder: 1/8 teaspoon
Cashews chunks: 1/4 cup(optional and it can be increased or decreased)
Yellow Food Colour a pinch ( or take few strands safforn and mix with milk)

Directions

Pineapple Syrup:
Blend the pineapple into puree.
In a small pan add pineapple puree and sugar and  cook for 2 or 3 minutes covered.

Kesari:
In a pan add ghee and cashews and cook until it turns light brown and then add semolina and fry until it slightly changes colour and gives out beautiful aroma. Turn off the flame and rest for a minute.
Now add sugar, milk, colour/saffron and water and mix well until well combined and turn on the heat to medium low and cook until the mixture comes nearer.
Now add the pineapple syrup and mix again and cook again until desired consistency.

Tips
If you use more ghee then you will get grainy kesari.
You can add few chunks of pineapple in your syrup if you like the chunks in between every bite....but i like smooth kesari so i didn't add chunks..

  4. Nisa, I've tasted pineapple kesari as prasadum at the temple but didn't know how it was made. Its been at the back of my mind to search and find out so I can make it at home. Now I don't have to search, bookmarking this one. It looks so so nice.
