Broccoli Aloo Paratha Recipe
Paratha is famous flatbread from India and South Asia,which is eaten anytime of the day . These breads can be stuffed with veg or non veg or simply with sugar (sweet paratha). For a amateur cook, Stuffing a paratha perfectly comes with practice but it's easy to get a hand on it.But they are super yummy so don't miss to practice it.
Today's paratha came to my mind just on a fly as i was planning to make aloo paratha for dinner but when i found broccoli in the fridge and was not at all in a mood to have this for atleast 2 or 3 days...so i thought why not i include this in aloo paratha and tada here come Broccoli Aloo Paratha...this became a hit in family...Usually my hubby never gives any feedback whether it's good or bad...but this paratha made it...he asked how i made this,it's yum (kaisey banaya bahut accha hai)...felt happy.

Easy Mooli Paratha

Level: Moderate
Total Time: 50mins
Serves: 4
1 cup:250 ml

Ingredients

Dough:
Whole Wheat Flour: 2 cups
All purpose Flour/Maida: 1 cup
Salt:1/2 teaspoon
Oil: 3 teaspoons
Water as required to form a dough

Stuffing:
Broccoli Florets:300gm
Potatoes: 300gm
Chilli Powder: 1/2 teaspoon(to taste)
Salt to taste
Cumin Powder:1/4 teaspoon
Garam Masala Powder: 1/2 teaspoon

Butter/Oil for making parathas

Directions

Take all the ingredients under dough and mix well and form a dough which is not too soft or hard and keep it aside for 10 mins.
Boil the potatoes until cooked in pressure cooker for 2 whistles. Once the cooker cools down, discard water, peel and mash the potatoes in a bowl.
Use the food processor and blend the washed,tap dried broccoli florets.
In a pan add processed broccoli florets and fry on high flame for 8 to 10 mins on high flame until the wetness in broccoli is gone.Turn of the heat and now add mashed potatoes, chilli powder, garam masala, salt and cumin powder and make a dough.
Divide broccoli stuffing dough in 10-12 equal balls and also dived paratha dough little bigger than broccoli balls.
Now flatten the paratha dough ball 4 inch in diameter,brush oil on top and place the broccoli ball in middle and wrap around the broccoli ball.
Now dust the flour on countertop and roll the stuffed dough ball with light hand roll the paratha as thin as possible. 
Now heat the pan and fry the paratha on both sides till you spot brown spots on both side. Apply oil/butter on one side while frying the paratha.
Enjoy hot with raita or pickle or with any spicy curry.

Tips:
You can add green chilli paste,Amchur Powder(Dry Mango Powder), fresh chopped coriander to your tastebuds.

Serves: 6

Ingredients
Dry Fruit Bites(Serves 2):
Dry Fruit Powder*: 1 1/2 tablespoon + sprinkling
Hanged Yogurt (Very thick Yogurt): 1/4 cup
Sweetener to taste (honey or powdered sugar)
Dry Fruit Powder*: blend Almonds:8, pistachios:8 and coconut:1/2 tablespoon to fine powder

Strawberry Bites(Serves 2):
Frozen/Fresh Strawberries: 1/2 cup
Hanged Yogurt (Very thick Yogurt): 1/4 cup
Sweetener to taste (honey or powdered sugar)--optional

Nutella Bites(Serves 2):
Nutella: 1  tablespoon
Hanged Yogurt (Very thick Yogurt) : 1/4 cup


Directions
Dry Fruit Bites:
Mix all the ingredients in a bowl well and place it in silicon cupcake liners and freeze it.
Strawberry Bites
In blender blend strawberries to smooth puree and mix it with yogurt and sweetener and pour it in silicon cupcake liners and freeze it.
Nutella Bites
Mix in Nutella and yogurt and place it in silicon cupcake liners and freeze it.

Tips
You can add any seasonal fruits and try different combos with chocolate.

No Bake Chocolate Fruit Pizza Recipe
Today's recipe is most loved by kids but in healthier and in different version....yes it's pizza with new dessert version.This Chocolate Fruit Pizza is simple,easy, healthy, No cook, No bake and yummilicious. Like all other pizza's even this pizza has base, Cheese filling and toppings but all in healthier version. Chocolate pizza recipe is easy to make and uses ingredients from pantry. Chocolate Fruit Pizza was on my todo list for a long time and i saw this on pinterest and always wanted to make it for dessert but i completely forgot about it. But when #foodiemonday friends decided that  this week we are doing Pizza party...i was excited to do cauliflower crust pizza...but things are not the way we think, my little one was down with fever for almost a week and i dropped the idea of making up this week monday blog hop.But today morning when i saw tempting pizza recipes from foodie friends i couldn't stop myself and thought of getting in mood to make it but the simpler version and Chocolate Fruit Pizza came to rescue me...now i am feeling happy that i made this for breakfast and my elder princess gobbled up 2 portions along with her regular breakfast and the little one just took the pizza cutter and started to slice it and make mess all around...

Stuffed Dates

Deviled Eggs

Level: Easy
total Time: 15 mins + chilling
Serves: 4

Ingredients
Base:
Almonds: 1/2 cup
Pitted Whole dates: 8
Melted Butter/ Coconut Oil: 1 tablespoon
Unsweetened Cocoa Powder: 1/2 tablespoon
Vanilla extract: 1/2 teaspoon
Filling:
Cream Cheese: 50gm 
Greek Yogurt(thick yogurt): 50gm
Water: 1/4 teaspoon
Vanilla Extract: few drops
Toppings:
Favourite fruits and dry fruits chopped

Directions
In a blender blend almonds until they form powder, then add pitted dates, cocoa powder, butter. Blend until dates are well combined.
Now press the mixture on springform tin or tart dish or small tin with cling film covered and place in fridge for an hour or 15 mins in freezer.
Mix in cream cheese,yogurt,vanilla extract and water in a bowl.
Now spread cream cheese mixture on to pizza base and top it with your favourite fruit toppings. 
Serve immediately or keep it in fridge until ready to serve.

Tips
You can add cashew nuts along with almonds.
You can flavour the filling with orange zest.
If you don't have cream cheese replace it with equivalent amount of fresh water drained thick yogurt.

Andhra Kodi Guddu Pulusu ( Andhra Style Eggs in tamarind gravy) | Flavour Diary | step by step

Eggs are very versatile that we use them in many ways in both sweet and savoury form.We can have these eggs in breakfast (stuffed French Toast) or as snack/appetizers (Deviled Eggs) or as sandwich (Egg Mayo Sandwich) or at any part of the day. 
In India we can find huge range of Egg curries with variations in each part. One such egg curry from Andhra Pradesh is called Kodi Guddu Pulusu. Pulusu is a Sweet tangy liquid gravy with Veggie or eggs or meat cooked in it, and is served with hot steamed rice. Pulusu is bit common in Andhra household that it is made on regular basis.And tanginess of the gravy comes from tamarind. 
Kodi Guddu means Hen eggs in english.. So this Kodi Guddu Pulusu is basically boiled eggs in tangy gravy which is made up of tamarind, onions and some spices.This is easy to make and takes less than 30 mins and is best side dish served along with hot boiled rice.

1 cup:250 ml

Ingredients

Hard Boiled Eggs: 3 ( My eggs were small so i took more)
Oil: 2 tablespoons
Mustard Seeds: 1/2 teaspoon
Cumin Seeds: 1/2 teaspoon
Curry Leaves:1 spring
Onion: 1 (finely chopped)
Ginger Garlic Paste: 1/2 tablespoon
Tomato: 2 medium
Tamarind: lemon size ball
Turmeric: 1/2 teaspoon
Red Chilli Powder:1/2 teaspoon (to taste)
Cumin Coriander Powder/Jeera Dhaniya powder: 1 teaspoon
Egg Masala powder: 1 teaspoon
Coriander Leaves chopped for garnish
Salt to taste

Directions

Hard Boil your eggs. Then make slits lengthwise 2 sides of the egg.
In 1/2 cup of hot water add tamarind and soak for 10mins.
While your eggs are boiling. In a pan heat oil and add mustard seeds. Once mustard seeds crackle add cumin seeds, green chilli, onion and curry leaves.
Once Onions are transparent add ginger garlic paste and saute for a minute, now add chopped tomatoes,spice powders(turmeric,chilli powder,coriander cumin powder) and saute until tomatoes are mushy  and add the extracted tamarind pulp. Add 1.5 cups of water and bring it to boil. Add salt and eggs and turn the heat to low.
Cook for 10 more minutes on low heat and garnish with coriander leaves and serve.

Fried Ice-Cream recipe | Summer Recipes | Flavour Diary

Yes you read it right...its fried Ice cream...that sounds interesting right... Its been ages ago when me and my friends went for girls team lunch. Ordering and trying different things is my passion so i was lucky to find this interesting dessert on my table. When i saw this on the menu, i laughed at it and ordered it. I was soo excited and eagerly waiting to see how they would serve fried ice cream and they served a ball on a plate drizzled some chocolate sauce on it. It was hot crunchy from outside and cold and soft inside.
When my foodie monday group decided to have some summer theme for a bloghop ... i was not will to have same traditional summer coolers, so search google for help...and by seeing fried Ice cream i was happy and decided to give it a try. There were two ways of doing this fried ice cream one with crushed cereals and egg wash...this is Mexican Fried Ice Cream and the second is Tempura Fried Ice Cream which is cake and tempura which is famous in East Asia. I was not bit confident about crushed cereals and egg wash and it takes bit more steps and time, so i just skipped the Mexican style. Next was tempura way  where we use cake to cover the ice cream and dip it in tempura liquid...hmmm i thought this would be too sweet and then i just remembered my Bread Bonda where we stuff the veggies in the bread and so i did the same way and dipped it in tempura batter and tadaaa i was happy to see the output. 
If you want to surprise yourself or family or friends you can give it a try just like my Custard Powder Lava Cake where the flood of custard blows out when you slice it...so yummy.

Serves: 3

Ingredients
Ice cream: 3 scoops (your choice of ice cream)
Bread Slices: 3-5 as required
Milk: 1/2 cup
Egg: 1 small
Water: 1/2 cup
BreadCrumbs as required*
Garnish
Whipped Cream
Chocolate Sauce
Cherry
Sprinkles

Directions
Scoop out 3 scoops of ice cream and make round shape using your hand.
Cut the edges of the bread,roll it and wrap round the ice cream use bit of milk to seal the edges. Wrap cling film or plastic wrap tightly and put it in the freezer for minimum of 4 hours or till the time you want it.
Just before deep frying , In a deep bowl add milk,water and egg and whisk until well combined. Take bread crumbs in wide plate.
Unwrap the plastic wrap dip in milk mixture and then roll in breadcrumbs. Press the crumbs and roll second time in the bread crumbs. Make sure it is coated properly.
Heat the oil in small deep bowl, once oil is hot carefully drop the ice cream bowl in the oil and keep stirring so that it is cooked on all sides. Once it turns golden brown take off and serve immediately with your  favourite toppings and enjoy.
*BreadCrumbs: I took the bread edges and  bread slice and blended to fine powder.
Tips
You can replace egg with 2 tablespoons of plain flour.
Make use of your favourite ice cream.
