Mahalabia /Muhallabieh - Middle Eastern Milk Pudding | 3 toppings | Flavour Diary

Mahalabia Muhallabieh
Quick and easy recipes which are made less than 20mins are always have a space in my todo list and one among the list is Mahalabia. Mahalabia is a middle eastern dessert which is very light,rich and creamy. A mild flavour of rose is pleasant and traditionally Mahalabia is generously topped with dry fruits. I have topped it with fresh fruit, fruit puree and traditionally mixed dry fruits.It is often eaten during Ramadan after Iftar or for suhor.
Mahalabia is a milk pudding similar to our Indian kheer with no ghee/butter and is made in no time without any hassle. This needs quite few ingredients.

total Time: 20 mins + 3 hrs to chill

Ingredients
Milk: 2 cup (replace 1 cup of milk with heavy cream to make it more rich)
Corn Starch: 4 tablespoon
Water: 3 tablespoon
Sugar: 4 tablespoons (to taste)
Rose Essence: 1/2 teaspoon
Garnish
Dry Fruits
Chopped Fruits
Fruit Pure

Directions
In saucepan add milk and bring to boil.Add sugar.
In a bowl add cornstarch and water and mix well and add to the milk mixture.
Stir vigorously until the mixture thickens and small bubbles appear. cook for further 5 minutes and add rose essence.
Pour into individual serving bowls and garnish with your favourite topping.

Tips
You can replace rose essence with 1 tablespoon of rose water / orange blossom water.
To make it dairy free use coconut/almond milk.

Madgane | Konkani Dessert | Kheer Recipe | Flavour Diary

Madgane Konkani Dessert
Madgane is a traditional festive dessert from Konkan region of India. Madgane is prepared using rice, Split Chickpeas/Chana Dal and jaggery and is also known as Chana Dal Kheer or payasam. This is easy to make and uses handful of ingredients. This has got a hint of coconut flavour gives an extra kick to the dessert. Madgane is healthy, Gluten Free and Dairy Free dessert so this can be enjoyed by most of us...So check out the ingredients and steps to follow.
I have adapted the recipe from a friend Khushi and have changed few things and it turned out awesome.

Sheer Khurma

Thandai Baked Yogurt / Misti Doi
Level: Easy
total Time: 40 mins
Serves: 4

Ingredients
Chana dal / Split chickpeas: 1/2 cup
Rice Flour: 2 tablespoon
Grated Jaggery / Brown sugar: 1/2 to 3/4 cup (to taste)
Coconut milk: 400ml (1 can)
Cardamom powder: 1/2 tsp

Tadka
Cashew chopped: 1 1/2 tablespoon
Almonds chopped: 1 1/2  tablespoon
Pistachio chopped: 1 1/2 tablespoon
Butter / Ghee: 2 tablespoon
Saffron for garnish

Directions
In a pressure cooker add chana dal and dry roast for 2 mins and pour 1.5 cups of water and pressure cook for 4 whistles or until dal is cooked but not mushy(dal should hold its shape)
Now add Jaggery and Rice Flour to the dal and cook until jaggery is melted. Once jaggery is melted then add coconut milk and cardamom powder to it and bring it to boil. Cook until the desired consistency.
Tadka:
In a small pan add butter/ghee and add nuts and fry till they turn golden brown and then add this to the dessert.

Tips
You can replace coconut milk with any dairy free milk or can use full fat milk.
If you are vegan then don't add butter,simply dry roast the nuts and add to the dessert.

This dessert thickens up when it cool downs. Just before serving add little water and bring it to boil,  as this tastes the best when served hot.

Chawal Ki Kheer --- Indian Rice Pudding | Flavour Diary




Oo my my, I am missing all precious moments of holding a new born nephew in my arms. Hope i will do that soon when i go back india. I am sharing my happiness with you all by sharing a most popular dessert from india which is quite easy and needs very less effort.
This is rich creamy and thick rice pudding called Chawal ki Kheer, which is made for any celebrations or for just any sweet tooth day. I love to have this chilled but this will also taste great when hot.

Level: Easy 
Total time: 30-45 mins
Serves: 4

1 cup = 240 ml

Ingredients

Basmati/Long Grain Rice : 1/2 cup
Sugar: 1/2 cup
Cardamon Powder : 1/4 teaspoon
Mixed Nuts(Almonds, Pistachio, Cashew): 1/4 cup
Milk: 1.5 liters


Directions

Wash and Soak Rice for 2 hrs. Drain water and blend it for 20 seconds.It should be grainy texture.
In a heavy bottom pan bring milk to boil and then add rice and sugar. 
Cook on medium flame and stir in between and make sure it won't stick to the bottom. Once the mixture is little thick, add cardamon powder and Chopped nuts. Cook till the mixture is thick or to your desired thickness.

Adjust the sweetness to taste and Serve hot or chilled, both tastes great.
