Coconut Macaroons recipe | Sweet Treat tea time snack | Flavour Diary

simple easy coconut macaroons recipe


Today's recipe is an incredibly simple to make tea time sweet treat called Coconut Macaroons.These are crispy and golden on outside and moist and soft inside.
These are irresistible to stop at one but you can bake big batch and store for few days, and these are one of the best homemade gift to passover.
If you are coconut lover and have a sweettooth then these are yum for gobbling them at any time of the day.
This month MFB challenge was to cook a recipe from the blog "This Muslim Girl Bakes". She has got very lovely recipes in her blog with step by step pics and beautiful photography.
As her blog represents bakes, i just wanted to try baked products and It was hard for me to decide which one to choose from her recipes but finally decided to do Coconut macaroons. I tweaked the recipe a bit, i was out of stock of Almond flakes so i used desiccated coconut instead.
I totally forgot about the challenge and this is was last moment prep. Because of time constraint, I skipped the decoration too. But the recipe turned out super yummy and my elder one gobbled up few before her Gymnastic class and she said they tasted similar to store bought one. I was really happy that i did visit her recipe and tried it.

Prep Time:10 mins
Bake Time: 15-17
Makes: 14-16
1 cup: 250ml
1 tablespoon: 15ml
1 teaspoon: 5 ml

Ingredients

Desiccated Coconut: 1cup (100gms)
Ground Almonds: 1/2 cup(50gms)
Sugar: 3/4cup(125gms approx) to taste
Cornflour: 1 tablespoon
Egg Whites: 2 large
Vanilla Essence: 1/2 teaspoon


Directions

In mixing bowl add all the ingredients except Egg whites and vanilla essence and keep a side.
Take another bowl add Egg whites and vanilla Essence and whisk until mixture is frothy.
Now add egg white mixture to the flour mixture and mix well until well combined.
Keep the mixture in the fridge for 10mins to set.
Pre-heat the oven at 160c/GasMarck 3 for 10 mins.
Now take a small ice cream scoop or 2 spoons and divide the mixture and scoop it up on baking tray with parchment paper. Keep the distance between the scoops.
Now bake the macaroons for 15-17mins at 160C until the bottom of the macaroon turns golden brown.

Few days back we went for Glamping along with 4 other families and it was too much fun. Glamping is like camping with luxurious accommodation with your kitchen in between the nature...far from city. Glamping in scotland is always a worth try if you are on visit to scotland, even though we are in scotlan from past 3 yrs we never got a chance to have this experience. 
Usually glamping sites are far from city and we have to prepack  some snacks, cooking items before we reach there.... its fun to cook along with your friends and feed the family in between the woods. When we were back we had lot of left over snacks and some fruits and few of my bananas were fully ripen. You know best ripen bananas are best for baking and have you checked my Super Moist Whole Wheat Banana bread and this time my over ripen bananas are flavoured with chocolate.
Todays recipe is adapted from blogger friend  Rafeeda who blogs at "Big Sweet tooth", she has recently crossed 1000 recipes in her blog and yes seriously 1000 in quite small period of span and this is really inspiring. So here is her Chocolate banana bread recipe which i tweaked a bit to taste.

Ingredients

Whole Wheat Flour (chapatti atta): 1 3/4 cups
Cocoa Powder: 1/4 cup
Overripe Banana: 3
Large Eggs: 2
Brown Sugar: 1/2 cup (add according to taste)
Cinnamon powder: 1 teaspoon
Baking Powder: 1 teaspoon
Baking Soda: 1/4 teaspoon
Vanilla Extract : 1 teaspoons
Butter: 110gm (Melted)
Salt a pinch

Optional Toppings:
Nutella: 3 tablespoons
Chopped Nuts( I used Cashews)

Directions

Preheat oven to 375º F (180º C). Grease the loaf pan with butter and line pan with parchment paper and butter it again the parchment. 
In a bowl mash the bananas, then mix butter,eggs, and vanilla together until well combined. 
In another bowl add whole wheat flour, sugar, cocoa powder,baking soda, baking powder and cinnamon powder.
 in banana mix and carefully mix it until well combined.
Pour the banana batter into the loaf pan and add your favourite toppings. 
Either added Nutella on top and swirled around with butter knife.and add chopped floured nuts on top.
Now bake the bread for about 40 mins and cover with foil and bake for more 10-15 minutes or until a toothpick pricked it should come out clean.
Let the bread cools down completely then slice and serve.

Nutella fusion dosa recipes

Nutella Nut Dosa is one of my once a week After School Snack for my kiddo. She loves this and gobbles up in few minutes and asks for more. This dosa recipe is easy to make in few minutes if you already have fermented dosa batter. 
Dosa batter is always in stock in fridge in most of south Indian household and we have too many variations in it with stuffing and without.You might love to check other dosa recipes like PesarattuColorful Egg DosaBeetroot Dosa.
I been very busy over a month and couldn't find any time to click and post...may be its because of my princesses are going bigger and more and more activites lined up for them. When my foodie monday team has come up with #fusionrecipes and couldn't find any time to come up with any recipe and thought of skipping the bloghop but then most loved kid friendly snack came to rescue .... just when my princess is back from school, i made this and felt this would be fusion recipe as this is desi with vdesi taste.Jaldi se i made this ,clicked it and feed the hungry baccha...finally task accomplish.

1 cup:250 ml
1 tablespoon: 15ml
1 teaspoon:5ml

Ingredients

Dosa Batter: 2 laddles (1 laddle per Dosa)
Nutella: 2 teaspoons( one for each dosa)
Oil: 2teaspoons( one for each dosa)
Chopped Nuts as desired (use combo of nuts)


Directions

For Crispy Dosa:
Heat the pan, pour laddle full of dosa batter and spread in circular motion and make a thin circle.
Sprinkle Oil on top of it. Once wet batter dries out, spread nutella on top of it and sprinkle chopped nuts.
Remove dosa and serve.

For Soft Dosa:
Heat the pan, pour laddle full of dosa batter and spread in circular motion and make a thin circle.
Sprinkle Oil on top of it. Once wet batter dries out, flip the dosa for 10 secs and remove on to the plate and now spread nutella on top of it and sprinkle chopped nuts.

Remove dosa and serve.

Tips
*Be quick in spreading nutella on crispy dosa, otherwise your nutella will be burnt.

Eggless Whole Wheat Finger Millet Chocolate Cake with Nutella Glaze (Healthy Ragi Chocolate Cake)



If you are chocolate lover and health concious of what you are having then this cake is for you...it's eggless, made with whole wheat flour and Finger Millet Flour (Ragi Flour) and most importantly its chocolaty and topped with delicious Nutella Glaze. This is cake is super spongy and soft and is great for tea time or after school snack or for any party or get together. Most importantly it's healthy and easy to make. It needs just mixing the ingredients with hands whisk.
Finger Millets/Ragi has very high protein contents, rich source of minerals, controls diabetes, reduces bad cholesterol, rich in antioxidants  and many other health benefits.In South India we have Ragi in many ways like Ragi Mudda, Ragi Malt, Ragi Dosa, Ragi Ladoo and many other ways. And now it's time for Cake which is super yummy.

Prep time: 10 mins
Bake time: 40 mins
Serves: 8
Makes: 7" cake

Ingredients

Dry Ingredients
Whole Wheat Flour:  1 cup
Finger millet/ragi flour: 1/2 cup
Brown Sugar: 1 cup (or white sugar-3/4 cup)
Baking Soda: 3/4 teaspoon
Cocoa powder: 2 tablespoon
Salt a pinch 
Wet Ingredients
Greek Style Yogurt/Thick yogurt: 3/4 cup
Milk: 1/2 cup
Any flavourless oil: 1/4 cup 
Vanilla Essence: 1 teaspoon 
Nutella Glaze
Nutella: 2 tablespoons
Butter: 1 tablespoon
Milk: 3 tablespoons

Directions

Preheat the oven at 180c for 10 mins. 
Prepare your pan by greasing with butter and dusting with flour.
Sieve ragi flour, wheat flour, cocoa powder, baking soda and salt. combine all dry ingredients in a bowl.
Combine all wet ingredients in another bowl.
Now combine both Dry and wet ingredients, Don't over mix the mixture. The batter should be little pouring consistency,so add more milk if required.
Pour the batter in greased baking tin and tap it on the worktop 2 ,3 times and bake it for 35-40 minutes or until toothpick inserted comes out clean.
Take out the cake and let it cool on cooling rack. Now make a Nutella Glaze.
In a microwave safe bowl add Nutella,milk and butter and heat for 30 to 1 min. Mix well and pour on the cake when cake is cooled completely.

Apple Doughnuts with 3 frostings



These Apple Doughnuts are not really doughnuts but these are yummy apples sliced and frosted and are healthy after school snack. These easy peasy doughnuts can be made by your little ones, they will be excited in frosting and decorating their own doughnut slices.

Apple: 1 large (Used Gala Apple)

Frostings:
Greek Yogurt (or any thick yogurt)
Peanut Butter
Nutella

Decoration (optional)
Chopped nuts
Raisins
Sprinkles

Directions

Slice the Apple horizontally in 4-5 pieces of 2 cm width. Remove the center using small cutter.
Tap with kitchen paper for removing the wet (optional step)
Spread your favourite frosting and decorate it as you like and enjoy the treat.

Chegodilu (Chekodi)


Chegodilu (Chekodi) are one of the yummiest snack from Andhra Pradesh and specially made at home during festive season. You can even get these from Sweet Shops in the South India. These are so yum that you can't stop eating it until its all gone.
Making Chegodilu at home takes looong time, so if you have lot of spare time and want to kill the time and have patience to do then making these is one good option..(that's the reason why its festive food). I made these in less quantity and that too with my little helper. She was excited to help me...and finally she when she ate (for the 1st time) she said its awesome mom and said that the ones she made was crunchier than what i made(hahaha).
Here comes my little helper

As a kid we loved them, we used to wear it like all over the fingers and munch it...just like she did, loved those childhood memories.
Chekodi have many versions and this version is gluten free and dairy free,so it  can be enjoyed by everyone.Lets check how its done and ingredients of these yummy snack...

Level: Moderate
Total time: 90 mins
Serves: 4
1 cup = 250ml

Ingredients

Water: 1 cup
Butter/Oil: 1 tablespoon (+ for kneading)
Salt: 1/2 teaspoon (to taste)
Yellow Moong Dal: 1/4 cup
Rice Flour: 1 cup
Cumin Seeds: 1 teaspoon
white Sesame seeds( white Til): 2 teaspoons
Red Chilli Powder: 1 teaspoon


Directions

Wash and soak Moong Dal for 20mins.Drain the water and keep it a side.
In wide pan water and bring it to boil.
Add Butter,salt, Moong Dal and cook for 30 secs and then rice flour. Mix well and turn the flame off.Let the mixture cools a bit (dough should be warm and we should be able to handle the dough with hand).
Add Cumin seeds, Sesame seeds and red chilli powder and knead well to form a soft dough.
Take gooseberry size ball make a long even string, pinch the edges and form a ring.
Heat oil and fry the rings(chekodi) on medium low flame until light golden brown on both sides. (Oil air bubbles around the chekodi will get reduced when they are done with cooking is an easy indication).


Tip:
Apply little oil while kneading the dough. Knead it until soft otherwise you will have trouble while making the chekodi rings.
Apply oil to hand while making the strings and rings, this will prevent the dough from sticking to hands.
Always fry in medium low flame, otherwise the chekodi will burn from outside and undercooked from inside.

Yogurt Sandwich


Yogurt sandwiches are one of my favorite breakfast....because it gives cheesy flavor without any cheese in it.These sandwiches are crispy on onside and soft inside and these are best when they are hot...most important is these are easy to make and no need of sandwich maker. Today's yogurt sandwiches are basic version with few ingredients...you can add as many veggies as you like. You can also use whole wheat bread instead. Lets go through the ingredients....

Level: Easy
Prep Time: 5 mins
Total time: 15 mins
Serves: 2
1 cup = 250ml

Ingredients

Bread Slices:6-8
Thick Yogurt: 1 cup
Tomato: 1 medium
Onion: 3/4th of medium size
Fresh Coriander chopped: 1 tablespoon
Red Chilli powder: 1/8th teaspoon (to taste)
Salt to taste
Oil for tossing

Directions

Chop Onion and tomato finely.
In a bowl add all the ingredients except bread and oil and mix well.

Take slice of bread and spread the yogurt mixture on it.
Now heat the pan add little oil and place the bread (with yogurt mixture)  on it and then place plain bread on it and press gently. Flip the sandwich and remove it once it turns golden brown on both sides.

Repeat this for other remaining bread pieces. 

Tip:
Its most important that the yogurt used should be thick...with less or no water content. If the yogurt is watery/runny then your sandwiches will be mushy.
