Tawa Paneer Tikka Masala recipe | Vegetarian Curry | Paneer Recipe | Flavour Diary

Paneer tikka masala
Paneer Tikka is a popular tandoori dish which is made in tandoors. We can even make it at home either in oven or on stove top on pan/tawa. Todays post is all about stove top Tikka Masala, which yummy  dish best served with roti,naan, pulka or some flavoured rice(jeera rice). Its a two step preparation, first is to prepare paneer tikka and next is to prepare masala/gravy and then mix and cook for a minute.And serve hot.
Paneer is one of famous Cheese from south Asia and this is used as savoury or sweet ingredient in the recipes. Paneer can be made easily at home* or simply buy from the store.Here are few paneer recipes to check in sweet n curry version.

Serves: 3-4
1 cup:250 ml

Ingredients

Paneer Tikka:
Paneer: 200gm
Sunflower Oil: 1 tablespoon
Lemon Juice: 2 teaspoon
Ginger Garlic Paste: 2 teaspoon
Onion : 1 big square chunks
Green Bell pepper/capsicum: 1 cut in big square chunks
Plain Thick Yogurt/curd: 1/2 cup
Garam Masala: 1 teaspoon
Coriander Powder/Dhaniya powder: 1 teaspoon
Red Chilli Powder: 1 teaspoon (to taste)
Salt to taste (1/2 teaspoon)

Masala curry:
Onion: 1 medium
Tomatoes: 2 
Green Chillies: 2
Tomato ketchup: 1 teaspoon
garam masala:1/2 teaspoon
Red Chilli Powder: 1/2 teaspoon
Roasted Cumin Powder: 1/2 teaspoon 
Kasuri Methi (dry fenugreek leaves): 2 teaspoon crushed
Oil: 3 or 4 tablespoons
Cardamom pods: 1 or 2
Cloves: 2 or 3
Cinnamon stick: 1 inch
Fresh Cream: 1/2 cup
Coriander Leaves chopped: 1/4 cup
Salt to taste

Directions

Paneer Tikka:
Chop paneer, onion and capsicum/pepper in cubes.
In a bowl all other ingredients under paneer tikka except oil and mix well. 
Now add chopped paneer,onion and capsicum and mix well until mixture is coated well and keep aside for 15 mins.
Heat pancake pan/tawa add oil and place paneer,capsicum  and onion pieces and saute it on high flame until capsicum and onions are crispy but cooked. Keep a side.

Masala:
Roughly chop onion and blend it to smooth paste.
Roughly chop tomatoes and green chillies and blend it to fine paste.
In a pan heat oil and add cloves,cinnamon stick, cardamom, onion paste. stir till oil leaves and then add tomato puree. 
Cook for half a minute and add spice powders(turmeric,chilli powder, cumin powder,garam masala,salt and tomato ketchup) , mix well and then add cream and mix well again.
Stir and cook until water is evaporated, now add 1 cup of water mix well. Once water comes to boil add coriander leaves,kasuri methi and paneer tikka to it. Cook for a minute and turn off the heat.
Serve hot with rotis, phulkas, naans or any flavoured rice(Jeera Rice)

Stove Top Swiss Roll



Today i am happy to share a different recipe where we will be cooking a cake, yes i said cooking not baking .No need to have any baking pans or oven, just you will need a pan and a stove is it not interesting.

Ingredients

Eggs - 2 large
Sugar - 2 tablespoons
Vanilla essence - 1 teaspoon
Jam  - 3 tablespoons (Any flavour)
All-purpose flour  - 4 tablespoons
A pinch of Salt
Ghee/butter for spreading

Directions
  • In a bowl add eggs, sugar, vanilla  and salt and whisk it till volume doubles in size and pale in colour. 
  • Add in the flour one tbsp at a time till the batter is done.
  • Heat a pan (used dosa pan) and rub ghee all over it. Spread the batter evenly to get same thickness. Cook on low flame with closed lid till the top is cooked (top shouldn't be sticky when touched).This is take around 10mins.
  • Spread the jam on top of the cake when slightly cool.And then lick spoon at the end he he i did that.
  • Roll tightly and leave wrapped in a towel for around 10 minutes.
  • Unwrap and cut into slices and serve.

Tips

  • Don't overcook the cake otherwise you will face difficulty in rolling.

Yogurt Sandwich


Yogurt sandwiches are one of my favorite breakfast....because it gives cheesy flavor without any cheese in it.These sandwiches are crispy on onside and soft inside and these are best when they are hot...most important is these are easy to make and no need of sandwich maker. Today's yogurt sandwiches are basic version with few ingredients...you can add as many veggies as you like. You can also use whole wheat bread instead. Lets go through the ingredients....

Level: Easy
Prep Time: 5 mins
Total time: 15 mins
Serves: 2
1 cup = 250ml

Ingredients

Bread Slices:6-8
Thick Yogurt: 1 cup
Tomato: 1 medium
Onion: 3/4th of medium size
Fresh Coriander chopped: 1 tablespoon
Red Chilli powder: 1/8th teaspoon (to taste)
Salt to taste
Oil for tossing

Directions

Chop Onion and tomato finely.
In a bowl add all the ingredients except bread and oil and mix well.

Take slice of bread and spread the yogurt mixture on it.
Now heat the pan add little oil and place the bread (with yogurt mixture)  on it and then place plain bread on it and press gently. Flip the sandwich and remove it once it turns golden brown on both sides.

Repeat this for other remaining bread pieces. 

Tip:
Its most important that the yogurt used should be thick...with less or no water content. If the yogurt is watery/runny then your sandwiches will be mushy.
